When only the best will do, seek out royal Siberian ossetra caviar. The medium-sized glistening eggs with melt-in-your-mouth silkiness come from Siberian sturgeon. The dark gray beads are firm with a strong fresh taste of the sea. Expect a great caviar selection at Château, the elegant upstairs dining room at La Table. Spring for 1 ounce of ossetra caviar served with brioche and traditional accompaniments from the raw bar (you’ll need a glass of Champagne with that). Or, relish it on top of a seasonal specialty dish such as wild-caught striped bass. The gently poached striped bass is served with fresh steamed asparagus and crowned with black royal Siberian ossetra caviar. To gild the lily, a foamy pool of ethereal Champagne sauce surrounds the striped bass.
